Origine du nom : en occitan Palhièrs), l’origine du nom serait lié au nom latin de palearis qui évoque le souvenir de culture de paille, céréales et graminées.

On trouve Pailhès dans les textes dès 1255. Les portes munies de herses, les archères, les glacis à la base de hauts murs, assurent une défense efficace. Ancienne propriété des évêques de Béziers, il connut plusieurs propriétaires avant d’être vendu comme bien national. On voit, dans le centre historique, les voies romaines cardo et decumanus à l’origine de l’habitat romain.
