Origin of the name: in Occitan Palhièrs), the origin of the name is linked to the Latin name palearis, which evokes memories of straw, cereal and grass cultivation.

Pailhès can be found in texts as early as 1255. The gates fitted with harrows, the archways and the glacis at the base of the high walls ensure effective defence. Formerly the property of the bishops of Béziers, it had several owners before being sold as national property. In the historic centre, you can see the Roman roads cardo and decumanus, the origin of the Roman settlement.
